Saffrons was designed by hot new Sri Lankan architect Philip Weeraratne with the aim of creating a villa for all seasons that would capture the beauty of nature in each and every space. Calming architectural influences such as moving glass walls make you feel enveloped by nature and never contained within a box or a room while the panoramic vistas are made the most of so that they may be enjoyed from the dining pavilion, bed or bathtub. Comfortable custom-made furnishings are scattered about the villa in open living spaces that appear to merge from one room to another. The mesmerising 50ft Koi Carp Pool at the edge of the living room is an especially magical feature.

The almost one acre of magnificent palm-shaded grassy gardens that envelope Saffrons opens onto a fantastic stretch of beach at Habaraduwa, 12km south of Galle. While the beach doesn't offer safe swimming year-round, the villa's magical swimming pool is the ideal place to cool off and unwind. If you can tear yourself away from the villa, Saffrons is in a great location to enjoy the many attractions close by and is only a 20 minute drive from the historic city of Galle.

Saffron's cuisine is some of best on the island. The Internationally-trained head chef specialises in Middle Eastern, Thai and Asian Fusion cuisine which get rave reviews from guests delighted at his innovative combination's and memorable dishes. Fresh fish and seafood are often brought straight to the door by local fishermen. A popular choice is the homemade flat breads accompanied by spicy green tapenade, hummus and olives followed by hot Portuguese Piri Piri Chicken served with a home-preserved lemon, yoghurt and spring onion dressing or the chilled gaspatcho soup followed by a whole fish slow-baked with fresh herbs and spices in a banana leaf. Typical accompaniments for mains include aromatic rice, dressed salads, sauteed or roasted vegetables, chutneys and pickles while desserts such as Lime Delicious or Steamed Banana Pudding will finish off any meal.

Having learnt the art of Thai cuisine in Chang Mai, the Chef's Tom Yum Goon soup, green and red curries (made with homemade curry pastes) served with jasmine rice and fresh salsas or a delicious banana flower salad are often requested and remain popular. Mangoes with sticky black rice and coconut cream as a dessert is especially authentic.

Uniquely, Saffrons has two kitchens. The first is a fully-equipped modern kitchen while the second is an authentic curry kitchen where rice and curry is cooked in the traditional Sri Lankan way in clay pots over a hearth. A typical menu from this kitchen would start with Rasam - a tangy pepper soup from the north of Sri Lanka - followed by a delicious spread of curries that may include prawns, dhal with spinach and aubergine served with gotukola sambal, coconut sambal and pappadams. Wattalapam (palm sugar and egg pudding) is served as a traditional dessert.

The setting of Saffrons is as magical and varied as the food; dine in the indoor dining terrace beside the fascinating Koi Carp pool, under the frangipani trees in the garden pavilion or for that extra special memory from the owners' private Eco Island on Koggala Lake.

Saffrons can comfortably sleep six in its three stylishly designed suites. While the downstairs suite - a twin - has air conditioning and open onto either a pretty walled spa garden or grassy sea-view lawn all of the suites have cooling ceiling fans, ample furniture, en-suite bathrooms and plenty of soft bed-linen and fluffy towels. The two double Master Suites on the first floor are especially romantic and atmospheric since they are open to the sea breeze, have panoramic views of the ocean and come with en-suite open-air jungle showers. There is also a bathtub in each bathroom positioned in the most advantageous spot to slothfully soak up the stunning sea views.
